Why surface area matters (not width)

Cake batter fills a two-dimensional base. In geometry, the area of a circle scales with the square of its radius, not directly with its diameter:

If you pour an unadjusted 8-inch batter into a 9-inch pan, the batter will spread across 27% more surface area. The resulting cake layer will be approximately 21% shallower.

The circle fits inside the square; the four lime corners are the extra 27%.

A square pan is always 27.3% larger than a round pan of the same width. The four corners of the square account for the extra space. When converting a round recipe to a square pan of identical nominal width, increase batter by 1.27×.

The "water displacement" trick for odd pans

For fluted Bundt pans, decorative molds, or novelty shapes, water displacement is the easiest, most reliable volume test:

  1. 1. Fill the pan to the brim with water using a measuring cup or liter jug, counting the total volume.
  2. 2. Multiply total capacity by 0.65. This gives you the ideal 2/3 fill line so cake batter rises without overflowing.
  3. 3. Scale your recipe according to the cup capacity compared to your original pan.

Baking time & oven temperature adjustments

Changing pan depth alters heat transfer. If your batter layer is significantly thinner, reduce baking time by 5 to 10 minutes. If the batter layer is thicker, reduce oven temperature by 25°F (15°C) and bake longer so the center cooks through before the crust browns.

Scaling tricky ingredients (eggs & leaveners)

When applying a 1.27× multiplier, you will often encounter fractional amounts. Here is how professional test kitchens handle partial eggs and leaveners:

One large egg without shell weighs approximately 50 grams (30g white, 20g yolk). For 1.27 eggs, you need 63.5g: whisk a whole egg with a fork until homogenous, place a small bowl on your digital kitchen scale, tare it to zero, and pour in 63.5 grams.
